Ingredients Required:
2 cups cooked chicken breast
1 cup canned no salt black beans, drained and rinsed
11/2 cup diced tomatoes
1 cup whole kernel corn (canned or frozen)
1/2 cup diced red onion
1/4 cup chopped fresh cilantro
Dressing:
2 tablespoons freshly squeezed lime juice
1 tablespoon olive oil
1/2 teaspoon each ground cumin and granulated sugar
1/4 teaspoon each salt and freshly ground black pepper
- Instructions:
Combine salad ingredients in a large bowl and mix well
- In a small bowl,whisk together dressing ingredients. Pour over bean chicken mixture and stir until dressing is evenly distributed.
- Cover and refrigerate until ready to serve
